Chickpeas are part of a healthy part of a diet, as they are rich in compound carbohydrates (starch), protein, calcium, iron, magnesium, potassium and B group vitamins. Chickpeas were recently discovered by scientists to be particularly good for the heart and they are a very important component of a vegetarian diet.
Archaeologists claim that chickpeas have been a staple food for more than 7,000 years. Chickpeas originated in the Middle East, where they have remained a popular dish.
Chickpeas belong to the same family as peas, the Leguminosae, but like most members of that food family, technically they are not peas.
Sugat Chickpeas are best soaked in soft water. If your water is hard, we recommend adding Sugat Baking Soda to soften it. After they have been soaked and rinsed in several changes of water, chickpeas need to be cooked for 1½ to 2 hours.
